What is demi-glace?

Demi-glace is a slow-roasted, gently reduced sauce made over many (many!) hours. If you'd like to try making your own, check out our recipe, here!

For our Curious Cooks that don't have the time, we make our demi-glaces using bones, vegetables, and some of the most flavorful offcuts on the farm (read: chicken feet, carrot tops, and more). We believe every home cook can taste the benefits of being a little more adventurous with these overlooked ingredients - all while reducing food waste and getting top-quality, regenerative food.

How should I use my demi-glace?

Think of our demi-glace as three things:

  • A stand-alone sauce for dipping or drizzling
  • A flavor enhancer for classic meat recipes
  • An extra layer of umami for roasted vegetables, meatless dishes, and more

For example, our Roasted Chicken demi-glace can add hours of flavor to a simple soup. Our Grass Fed Beef demi-glace can add both complexity and a richness to roasted carrots, seared asparagus, or baked squash. But these are just our suggestions... there's no "wrong" way to use our demis!
