What are ‘offcuts’ and why do you use them?

→ “Offcuts” are the tasty bits most brands ghost. Strictly speaking, an offcut is any piece trimmed away during the food production process: bones, fat, skins, veggie tops, undersized eggs, you name it. These bits often get tossed aside in industrial production, yet they are packed with flavor and nutrition. Chefs have prized them forever, but they were sidelined in the modern food system. We are here to bring them back. Not just because they make your food taste better, but because they are better for farmers and better for the planet.

Here is the scoop: farmers who raise food the right way rarely get paid for these parts. Offcuts often end up in compost or pet food for pennies, sometimes at a loss. Regenerative farming works only when the whole animal and plant earn their keep. That is why every Offcuts Kitchen product comes from small farms committed to regenerative practices. We pay farmers fairly for their offcuts so they can keep farming the right way.

Where do you source your ingredients?

→ From regenerative farms where soil is royalty and animals are VIPs.

To us, regenerative means leaving the land richer than we found it. Our farmers rotate animals through open pasture, plant cover crops, skip synthetic fertilizers, and keep the soil covered all year so it can store carbon, hold water, and teem with life. That care shows up as better flavor on your plate and healthier ecosystems for the future.

What if my jars arrive broken?

→ Stuff happens in transit, but we have you covered. Snap a clear photo of the damaged jar with the shipping label visible and email it to hello@offcuts.kitchen. We will always offer up a free replacement or a full refund.

What’s the difference between broth, stock, and demi-glace?

Stock = Simmered bones + water. Rich in gelatin, great for cooking soups, stews, risotto, and more.

Broth = Stock, but seasoned and ready to sip.

Demi-glace = Broth reduced down to an ultra-concentrated, glossy sauce. A flavor bomb.

How do I use demi-glace?

→ Demi-glace is your kitchen secret weapon, even if you have only seen chefs whisper about it behind the pass. A spoonful adds instant depth to sauces, soups, and stews. What’s the best way to store your products?

→ Our products are shelf stable until they are opened. Once open, please store in the refrigerator and refer to the label for best-by details.

→ Demi-glace is just the beginning! In our kitchen lab we’re taste-testing a full lineup of flavor-forward staples. Over the next few months we’ll be launching jars of 100% grass-fed beef tallow, pasture-raised chicken schmaltz, and silky pork leaf lard that turns pastry into magic.
